Method (विधि)
1. Roasting and Cooking the Dalia
Wash Dalia: Wash the broken wheat (dalia) thoroughly with clean water and drain the excess water.
Roast Dalia: Heat 1 tablespoon of Desi Ghee in a large, heavy-bottomed vessel or pan. Add the washed dalia and roast it on a low flame for 5-7 minutes until it turns light golden brown. This significantly enhances the flavour of the dalia.
Jaggery Water: Heat 3 glasses of water in a separate pot. Once the water is hot, add the jaggery (gur) and let it dissolve completely. Once dissolved, strain the jaggery water through a cloth or sieve to remove any impurities.
Boil Dalia: Add about 1.5 glasses of plain hot water to the roasted dalia and mix well. Cook it on a low flame for 10-12 minutes or until the dalia is completely soft.
2. Mixing Jaggery Water and Dry Fruits
Add Jaggery Water: Once the dalia is soft and has absorbed the water, add the strained jaggery water to it.
Dry Fruits: Also, add the chopped coconut and raisins (the first portion) to the mixture.
Simmer: Cook the dalia on a low flame until it thickens and the jaggery water is fully incorporated (about 8-10 minutes). Stir occasionally.
3. Makhana and Cream Tempering (Garnish)
Prepare Makhana (Fox Nuts): Separately, heat 1 tablespoon of Desi Ghee in a small pan. Add the makhana and roast them for 4-5 minutes until they are crispy.
Fry Raisins: Once the makhana are roasted, add the remaining raisins and fry for a few seconds (the raisins will start to puff up).
Combine: Pour this makhana and raisin tempering directly into the cooking dalia and mix well.
Cream: After turning off the heat, stir in the fresh cream (malai). This will give the porridge a very creamy texture.
Serving (परोसना)
Transfer the sweet dalia into a bowl and serve it hot. You can garnish it with a few chopped almonds or pistachios on top.
