Healthy Tomato Soup Recipe | Perfect & Thick Tomato Soup
This is an easy method to make a thick and delicious tomato soup. It will keep you warm during the cold weather and is very simple to prepare.

Ingredients:
• Tomatoes: 4 (medium-sized)
• Carrot: 1
• Beetroot: 1 piece
• Onion: 1 (medium-sized, cut into four pieces)
• Garlic: 4-5 cloves
• Black Peppercorns: 4-5
• Rice: 2 tablespoons (for thickening the soup)
• Butter/Oil: 1 tablespoon
• Water: As needed
Seasoning for Soup (To be added later):
• Black Salt (Kala Namak):
To taste
• Black Pepper Powder:
To taste
• Coriander Leaves: 4-5 (for garnish)
Method:
1. Prepare the Vegetables: Wash 4 tomatoes, 1 onion cut into four pieces, a 1-inch piece of beetroot, one carrot, and 4-5 garlic cloves thoroughly.
2. Boil: Put the prepared vegetables, 2 tablespoons of rice, and a little water (about 2 cups) into a pressure cooker and cook until 4-5 whistles.
3. Cool and Blend: Allow the cooker to cool down. Once the mixture is cool, transfer it to a blender or mixer jar and blend until it is very smooth.
4. Strain: Strain the blended mixture into a large vessel using a strainer to separate the tomato seeds and coarse fibers.
5. Cook: Put the strained soup back on the gas stove and boil it for 5-7 minutes on medium flame until it thickens slightly.
6. Season: Add black salt and black pepper powder to it and mix. If you wish to reduce the sourness, you can also add a little sugar.
7. Serve: Transfer the piping hot soup into bowls. Garnish with 4-5 coriander leaves and a little butter on top. Serve it hot with bread pakoras (or bread croutons).
