Ingredients & Instructions:

1. First, wash and finely chop the spinach.

2. Add finely chopped green chili, fresh coriander leaves, and long, thinly sliced onion (along with four to five cloves of crushed garlic) to the spinach.

3. In the mixture, combine one bowl of gram flour (Besan), a small bowl of maize flour (Makki ka Atta/Makki Ghata), salt, dry mango powder (Amchur Powder), and Garam Masala.

4. Mashing and adding one boiled potato improves both the flavor and binding quality of the mix.

5. Mix all these ingredients thoroughly to form the batter/mixture.

6. Heat oil in a Kadai (wok). Slowly drop small portions of the mixture and deep-fry the pakodas until they turn golden brown and perfectly crispy.

7. These pakodas achieve their incredible crunch due to the maize flour.
